The shortage of sunflower oil in France
Indeed, sunflower oil has already disappeared from the shelves in some supermarkets. In fact, in fear of not finding any more, the French are already beginning to overstock what is nicknamed “agricultural yellow gold”.
In question ? Direct consequences of the war in Ukraine, the first exporting country in the world. Moreover, the shortage of this commodity threatens to occur in the coming months, even as early as next week according to the NGO Foodwatch.
Solution envisaged, use sunflower oil produced in France. But the problem is that it is not enough to meet national needs. We produce 500,000 tonnes of sunflower oil per year and we consume 800,000 tonnes of vegetable oils.
An essential food for our meals!
From now on, it is therefore difficult to imagine cooking without the one that is among the oils most used by the French. However, in order not to alter the taste of our favorite meals or incur the slightest risk… Better not to replace it blindly.
In fact, each oil has its own uses, we know that! So if some are good for cooking, others are more for seasoning or frying…
What can I substitute for sunflower oil for frying?
Its neutral taste and heat resistance make sunflower oil an all-purpose oil. It is used both in pastries and cakes, in fried foods and in seasonings…. Before knowing how to replace it, it is better to first identify your needs upstream. Moreover, for frying, all oils are not welcome. However, for fatty but healthy frying, coconut oil seems to be the most suitable.
It can withstand heat and does not degrade after several uses. Only downside! It now leaves a coconut flavor on food.
Other alternatives? groundnut oil, avocado oil or animal fat from duck lard….for example. However, it is better to avoid olive oil or rapeseed oil which cannot withstand high temperatures.
What to replace sunflower oil in seasonings?
For recipes of mayonnaise, vinaigrettes or even for cold preparations… The possibilities are also numerous. It is possible in particular to use olive, rapeseed, walnut, sesame, soybean, grapeseed, walnut or even peanut oils. They will know how to season all your recipes.
Indeed, while some are rather neutral, such as rapeseed, grapeseed… Others have sweeter or even fragrant notes (nuts, sesame…).
What can I replace it with in pastries and cakes?
Finally, to concoct your favorite cakes and desserts… You can easily replace your good old sunflower oil for butter. Grapeseed or rapeseed oil may also be quite suitable.
