Pastry lovers, the moment of unmolding your cake gives you cold sweats? Fortunately, there are a few tricks to avoid disaster and succeed in this step, which often has unpleasant surprises in store.

First tip: use a suitable mold

Right from the start, choose a suitable container. Indeed, the ideal is to use a silicone mold that does not require any addition of fat. Thus, the latter guarantees a beautiful rendering when demoulding.

Also, to make it easier to put in the oven…. Don’t forget to place your cake pan on a baking sheet before pouring your device into it. And always after cooking, you have to wait about fifteen minutes before unmolding it.

Prepare your mold

However, for a classic mould, the lining step is unavoidable! Grease your dish using butter, oil or coconut oil… Then pour a little flour and gently tap the dish above a work surface to remove the excess flour.

Another tip for a clean result? Place your buttered cake pan in the fridge for the preparation time to give it time to harden and set.

Also, beeswax protects against unmolding accidents. This by bringing a subtle flavor of honey. How to use it ? All you have to do is melt it, in a bain-marie or in the microwave, and spread it inside the mold using a kitchen brush.

Similarly, it is possible to line the bottom of the cake pan with baking paper or parchment paper. From now on, the addition of fat is not necessary.

Indeed, if this technique does not guarantee the most precise result, it does allow the most fondant cakes to be unmolded in record time by letting them cool directly in the parchment paper.

What if my cake sticks?

Did you not take the necessary precautions? Does your cake stick to the bottom of the mould? Do not panic ! At first, you can try to take off the cake by gently passing the blade of a knife around its edge.

So if this technique does not work, place your (metal) mold in a hot water bath for a few minutes. This trick facilitates the detachment of the sides of the cake.

Last technique, put your mold in the freezer. In fact, this action will allow your preparation to harden into a compact form. You will only have to unmold it cold by tapping the back of the mold, while using the blade of a knife.

If you feel that the cake is not salvageable…. why not make pop cakes? Moreover, this very easy preparation then makes it possible to use leftover cakes and thus avoid waste.

Mix in a few parts and mix them with spread to make small balls. Then plant them on sticks or toothpicks and leave to set in the fridge for at least an hour.

Then, melt some chocolate and dip the balls in it, then sprinkle them with sugar balls, crushed hazelnuts or chocolate shavings… depending on your taste.
