Although mascarpone is used in many recipes… It’s also a high-calorie cheese. So if you want to make a lighter preparation or you don’t have any more, here are some original tips to replace it.

What is mascarpone?

Mascarpone is an Italian cheese used in the preparation of many dishes and desserts, namely the famous tiramisu. Indeed, its manufacture is made from heated cow’s milk cream to which lemon juice or white vinegar is added to make it curdle.

Then, the dough obtained remains a long time in the refrigerator so that the preparation drips. Désirais is a different preparation from fresh cream which is made from raw milk, much less caloric than mascarpone. Fresh cream, ricotta, yogurts… What can you replace mascarpone in tiramisu and other recipes? Here is a list of products that may do the trick.

Fresh cream to replace mascarpone

Indeed, fresh cream can perfectly replace mascarpone in many preparations. Indeed, the taste and texture are almost unchanged. Sour cream remains one of the best products to replace it. However, do not hesitate to use light cream to lighten your recipe.

Whipped cream to replace mascarpone

Also, you can make a whipped cream with liquid cream to replace it. Moreover, the whipped cream makes it possible to bring a consistency closer to that of the mascarpone.

Ricotta to replace mascarpone

Ideal in some recipes, this cheese can also replace mascarpone. Ricotta is much lighter. So do not hesitate to add a little liquid cream to thin it out and obtain a better consistency.

Use cottage cheese!

Cottage cheese can also do the trick, especially in tiramisu. So, if you’re out of mascarpone but you have fromage blanc… go for it!

Use unsweetened condensed milk

Indeed, in some recipes, condensed milk, unsweetened, can replace mascarpone. It is also a lighter option for your desserts. We therefore advise you to put it in the fridge the day before and then beat it the next day to obtain a better consistency similar to whipped cream.

Use stirred yogurts

the ideal ally to lighten up a recipe! Indeed, stirred cheese replaces mascarpone in many recipes even if it is more liquid than mascarpone. So you can turn to the Petit-Suisses or the Skyr. These have a perfect consistency.

Mix fresh cheese and fresh cream

The mixture of fresh cheese and fresh cream then allows you to find a consistency close to that of Italian cheese. It is a good substitute for mascarpone when you are out of it. Also a lower calorie version.

Soy/vegetable milk yogurt to replace vegan mascarpone

It is now possible to replace vegan mascarpone. Use soy milk yogurts that you drain for a day in your refrigerator.

So use a large container to collect the water, a fine strainer and a clean cloth to lock the yogurts in, then another container to press. Whisk well the preparation obtained the next day, and add hot and liquid coconut oil and whisk again.
