And here it is, thanks to her determination, she finally managed to find how to make crispy-soft cookies as we like according to three recipes. Including chocolate chips, peanut butter and sugar. Without further ado, here’s how.

Depending on what you decorate your cookies with, the changes to be made are not the same to obtain a dough that is both crunchy and soft. Indeed, there are many tricks to obtain crispy-soft cookies. Here are some ideas for a crunchy and soft consistency depending on the cookies you are baking.

Tap the baking sheet lightly on the work surface. Also called pan-banging, this trick is super simple to do. Created in fact by Sarah Kieffer, a pastry chef who shares her recipes on her site “The Vanilla Bean Blog”.

It’s very easy. All you have to do is take your cookies out halfway through baking and tap the tray lightly on your work surface. Do this about three times. Also, for an even more satisfying result…. You can repeat the operation a few minutes before the end of cooking.

Leave the dough to rest for 24 hours

When you have finished your dough, place them on a baking sheet and let them rest in the refrigerator for 24 hours.

Bake your cookies the next day. The rendering is just stunning! They are soft in the center and crispy on the edges. Thus, they have a much more greedy look with better hold and better coloring. It’s still better to have round cookies.

Melted butter rather than soft butter

From now on, using melted butter rather than soft butter allows you to give a more chewy consistency to your cookies. And especially those with peanut butter which are even more so with this trick.

Use brown sugar in the recipe

Divide the amount of sugar by two and add a little less than half the missing sugar with brown sugar.

With this trick, your cookies will be more chewy except those with peanut butter. However, they should not be too sweet. Do not hesitate to find the ideal dosage of brown sugar according to your recipes. In addition to having a better consistency, the cookies will taste better overall.
